In the heart of Ogliara, a hilltop hamlet of the municipality of Salerno, a much-anticipated event returns each year: the Sagra delle Pennette all’Ogliarese, a festival that celebrates the flavors of local tradition in a warm and authentic atmosphere.
The undisputed star of the event is the pennetta all’ogliarese, a dish born in Ogliara and passed down through generations.
This flavorful and aromatic pasta is prepared with penne tossed with pumpkin, zucchini, sautéed guanciale, onion, vegetable broth, and a splash of dry white wine. A final touch of grated Parmesan and freshly ground black pepper completes the dish, resulting in a bold and comforting flavor typical of rustic Southern Italian cuisine.
