Gluten Free Vegan cooking class with chef Simone Salvini organized by Stefania Bottiglia and Zenzero Vegan and Vegetarian Restaurant.
A complete vegan menu dedicated to gluten-free, signed by chef Simone Salvini, from appetizers to desserts. During the course recipes designed by the chef will be made and will be deepened an educational path to the knowledge of food intolerances with ideas for the creation of new dishes Eating without animal and gluten-free derivatives, in order to satisfy the palate and amplify the taste, is a possible challenge. All participants will acquire the basic techniques to create a complete menu - appetizer, first course, main course and dessert - to be included in menus specialized for vegan and gluten intolerant.

Simone Salvini, internationally renowned chef, represents the avant-garde in high natural cuisine. After graduating in Psychology with a historical focus with Ayurvedic specialization at the University Florid College and NY College in Pisa, he moved first to Ireland and then to India where he studied Ayurvedic cuisine. In 2005 he became executive chef of the Joia restaurant of Pietro Leemann, where he created vegetarian dishes signed by a Michelin star. In 2015 he was present at Expo 2015 to take care of the catering at the Biological and Natural Pavilion. He collaborates with the Italian Vegetaran Association, the European Institute of Oncology by Umberto Veronesi and the Alma Cooking School for which he teaches natural vegetarian cooking courses. He currently lives between Bologna and Milan playing the role of ambassador chef of Alce Nero and carrying out the project of which he is founder, Ghita of Funny Veg.
