  • Not overly ripe tomatoes: preferably varieties such as beef heart, San Marzano salad tomatoes, beefsteak tomatoes, ribbed tomatoes (also known as Florentine tomatoes), and cluster round tomatoes;
  • Buffalo mozzarella: ensure it is fresh and of excellent quality;
  • Fresh basil: with large and fragrant leaves;
  • Extra virgin olive oil: a good quality EVO oil will make a difference;
  • Salt and pepper: to taste.

Procedure

  1. Prepare the ingredients: thoroughly wash the tomatoes and basil with cold running water. Slice the tomatoes about half a centimeter thick. Drain the buffalo mozzarella and cut it into slices of the same thickness as the tomato slices.
     
  2. Assemble the dish: on a serving plate, alternate layers of tomato and mozzarella slices, arranging them in a circular or linear fashion, as you prefer. Then, insert basil leaves between each slice.
     
  3. Dress: drizzle some extra virgin olive oil over the salad and add a pinch of salt and pepper.
