The T.S.G. mark, acronym for Traditional Specialty Guaranteed, is a quality certification attributed by the European Union to foods made following traditional recipes and typical techniques of local production without any constraint on the territorial origin of the raw materials or on the geographical place of production.

For example, the Neapolitan Pizza has the T.S.G. of traditional specialty as it can be produced in any country of the European Union, but to be defined "Neapolitan Pizza" it must be made following and respecting a specific "production disciplinary" (where, among other things, the following are indicated: production methods, the agri-food description and historical documents on the traditionality of the product) and must be certified by accredited control bodies.

The T.S.G. certification, after verification carried out by the Directorate General for Agriculture and Rural Development of the European Commission, is issued for Italy by the Ministry of Agricultural, Food and Forestry Policies.

Food products with the T.S.G. in Italy at the moment there are 3 and among them we find, in addition to the aforementioned Neapolitan Pizza, also the Mozzarella and the Traditional Amatriciana.

Products with the T.S.G. mark have a round yellow stamp on the package on which there is the wording "Traditional Specialty Guaranteed" with a blue circle inside with yellow stars.
